Gluten-Free Monday: Oven Browns

Inspired by last week’s foray into food blogging, I am initiating a new feature on my blog.  Every Monday I will feature a tip or recipe for gluten-free or low gluten eating.  Last week was dessert, this week a side.

Oven Browns/ Roast Potatoes



Oil (Olive, canola, corn or any other medium temperature cooking oil)

Salt and Pepper to taste

Other flavorings or spices, rosemary, oregano, sage, etc


Preheat Oven to 340 degrees.  Cut potatoes into one-inch chunks.  Spread out on baking dish or cookie sheet.  Sprinkle a tablespoon or two of oil over the potatoes, and then salt, pepper and fresh herbs or other flavorings.  Mix gently.

Cook for 45 minutes or until desired doneness.  (I sometimes cook them for an hour and a half to get them crispy.)

Serving suggestions:

Serve immediately.

Can be stored in the fridge and reheated or eaten cold.

Garnish hot or cold with cheese, hot sauce, other sauces, or add to salads.  I personally like oven browns served cold with feta cheese and a bit of fresh mint.
