Is the harsh reality of gluten intolerance dissing your trip, especially when you are craving that old comfort food standard, the grilled cheese sandwich? Gluten-free bread is expensive, and perhaps with the weather cooling down, you miss your old friend.
Never fear! A thrifty solution is here!!!! Substitute corn tortillas for bread and a quesadilla, er, cheese sandwich is your noontime destiny!!!
Start with two tortillas. Next, you need cheese. I prefer a good melting cheese, like this Monterrey Jack, or a Swiss. Some prefer Cheddar cheese, although melting Cheddar cheese is tricky.
Shred the cheese onto the tortilla. Cheeeesse.
Then put a pat of butter in a frying pan, turn the heat on half way and melt the butter.
Once the butter is melted, put the sandwich in the pan and heat on one side for five minutes.
Then flip and heat for five more minutes.
When done, plate, and garnish with salsa, if you like. Or if you want to be traditional, tomato soup.
