Gluten-free Monday: Macaroni and Cheese

One of the sheer joys in life is cheese.  And there are so many ways to experience this joy!

I love macaroni and cheese, but it is much easier (I think) and convenient to make one’s own.

“Macaroni” and Cheese, Gluten Free

8 oz. of pasta, gluten-free (works with regular pasta, too)

1 cup of milk

1 Tbsp of butter

1 Tbsp of cornstarch or gluten-free flour

4 oz of cheese, any kind, shredded, or cut into small pieces (I prefer sharp cheddar or blue)

Boil past per directions.  Drain and move into separate bowl.  Using the same pan (it is ok if there is a little bit of pasta water, add milk and butter.  Heat on med-low heat until butter melts and mixture boils.  Once it is boiling, stir in cornstarch (or other thickening agent).  Boil for a few more minutes, until the mixture thickens somewhat.  Then remove from heat and stir in cheese until it melts.  Add the pasta back into the pan and gently stir.  Serve.  Makes one meal or two sides.
