Gluten-free Monday: Shepherd’s Pie

So, perhaps you are wondering:  “If I am trying to eat gluten-free on a budget, what to do when I am bored of tacos and hamburgers?”

I have your answer!  Shepherd’s Pie.  Originally a leftovers dish, you can also make this yummy casserole from scratch.  Easy as Pie!!!

Shepherd’s Pie

2-3 cups of boiled potatoes

1-2 Tablespoons of oil

1 small onion, or ½ of a large onion

1 pound of hamburger


Other vegetables, chopped and pre-cooked, to taste

Chop onion and sauté in oil on medium heat.  When onion is softened and clear, add hamburger and sauté until hamburger is browned.  Add vegetables to your preference.  Add seasonings to taste.  Add water if mixture becomes dry.

Smash up potatoes.  Put a scant layer on the bottom of a casserole dish.  Place hamburger mixture on top of potato layer, along with any other vegetables you like.  Place remainder of smashed up potatoes on top of hamburger layer.  Cook in oven at 350 degrees for 45 minutes, or until top later of potato browns.
